A name with deep roots.
In the Mayan language of Yucatán, Nicté means plumeria flower, a bloom so sacred to the ancient Maya that the gods themselves were said to be born of it. A flower that stands for new beginnings. For vivifying energy. For life.
We named this truck that on purpose.
Because what we make here isn’t fast food. It’s food that carries something. Slow-marinated birria. Al pastor with that perfect char and pineapple sweetness. Carne asada done right on the comal. Every taco is a small act of care.
We’re a food truck in Brighton, Colorado, but everything on this truck is made the way it’s supposed to be made.
